1 cornbread mix
1 canned corn
2 T green chilies or jalapenos
1 c shredded cheddar
5 slices bacon
green chili or jalapeno
Include the ingredients called for in mix.


Start with a packet of cornbread mix. (I prefer the small boxes of Jiffy mix). Heat up a cast iron skillet to melt the butter (if it calls for it, if it doesn't add a couple tablespoons anyways). Put the mix in a bowl and add the right amount of milk or water. [mix might not call for eggs] Add eggs. Add the melted butter but do not scrape the pan clean. Stir until ingredients are moistened.

Add corn, chopped green chilies or jalapenos, shredded cheddar, and bacon. Pour into skillet. Stir only until mixed through.

Bake as directed until center is set and edges are golden brown.
