- non-stick cooking spray
- 3 slices bacon, coarsely chopped
- 4 c potatoes, sliced ¼" thick
- ½ c green bell peppers, chopped
- ½ c onion, chopped
- 1 c shredded cheddar cheese
- ¼ t seasoned salt
- ¼ t pepper
Fold a 36x18 inch peice of heavy foil in half. Lightly coat one side with cooking spray. Arrange half the bacon in center. Top with the potatoes, pepper, onion and cheese, mixed. Sprinkle on salt and pepper. Top with remaining bacon.
Lightly coat another 18" square of double thick foil. Place it on the potato stack and crimp together with bottom piece of foil.
Grill over medium heat for 20 to 25 minutes. Turn the packet once during this time.
