Blackened Chicken

Ingredients

  • Marinade
  • 2 c water
  • 2 T lemon juice
  • 2 T of soy sauce
  • 1 T lime juice
  • 1 T of Worchester sauce
  • Blackened Seasoning
  • 1 T salt
  • 2 t paprika
  • 2 t onion powder
  • 2 t sugar
  • 2 t black pepper
  • 1 t white pepper
  • 1 t cayenne pepper
  • 1 t ground oregano
  • 2 to 4 skinless boneless chicken breasts
  • 1 stick butter melted
  • vegetable oil

Instructions

Mix marinade ingredients.

Pound chicken out to ½ inch thickness. Rinse and dry chicken.

Put chicken in marinade and refridgerate overnight.

Mix blackened seasoning ingredients.

Heat cast iron skillet.

Remove chicken from marinade and dry. Melt butter. Dip chicken in butter and then spread on blackened seasoning generously.

Add oil and remaining butter to skillet. Cook chicken until done.
