Cioffi Meatballs and Red Sauce


  • Meatball Ingredients
  • 6-8 pieces Pepperidge farm white sandwich bread
  • ~3 lbs eye of round or bottom round, trim & grind twice
  • Italian bread crumbs
  • 1 egg
  • grated parmesan
  • garlic powder
  • parsley
  • minced garlic
  • salt
  • pepper
  • Red Sauce Ingredients
  • chopped onion
  • minced garlic
  • olive oil
  • Hunts red tomato sauce
  • parmesan cheese
  • parsley
  • garlic powder
  • white wine


Mix all meatball ingredients together and form the meatballs into oblong shape.

In corn oil on smallish frying pan, cover half of meatball, press down with fork while frying.

Fry till done through (brown on med, turn down to cook through)

For the red sauce, which should be started after preparing the meatballs, but before cooking them: Saute onion and garlic in olive oil. Add other ingredients - you are on your own for quantities. Simmer for a while. "Not a long cooking sauce."

Cooking time: 40 minutes
