Red Beans and Rice
- 1 lb red kidney beans, soaked overnight
- crushed garlic
- bay leaves
- Creole Seasoning
- kosher salt (start w/ 1 t, add to taste after cooked)
- andouille sausage, cut into ¼" pieces
- white rice
Soak beans overnight.
Place beans in crockpot and cover with water to 1 inch over the beans. Add garlic and seasonings
Cook for at least 6 hours
Taste and adjust seasoning.
Add the sausage and cook for at least 2 hours.
Remove bay leaves and serve over white rice.
Cooking time: 8+ hours. What's the hurry anyway?
