Red Beans and Rice

Ingredients

  • 1 lb red kidney beans, soaked overnight
  • crushed garlic
  • bay leaves
  • Creole Seasoning
  • kosher salt (start w/ 1 t, add to taste after cooked)
  • pepper
  • andouille sausage, cut into ¼" pieces
  • white rice

Instructions

Soak beans overnight.

Place beans in crockpot and cover with water to 1 inch over the beans. Add garlic and seasonings

Cook for at least 6 hours

Taste and adjust seasoning.

Add the sausage and cook for at least 2 hours.

Remove bay leaves and serve over white rice.
