Salad Ingredients
romaine hearts, halved and chopped into small dice
roma tomatoes, seeded and chopped into small dice
green bell pepper, seeded and chopped into small dice
red onion, chopped into small dice
olives, thinly sliced
italian meats of your choice
cheese of your choice
fresh basil, chopped fine
fresh parsley, chopped fine

Vinegarette Ingredients
1/4 c + 2 T red wine vinegar
2 garlic cloves, pressed
1/4 t Dijon mustard
1/2 t salt
1/2 t Italian seasoning
pinch black pepper
3/4 t sugar
1/4 c + 2 T extra virgin olive oil

Finely chop all salad ingredients (it is a chopped salad after all) and combine.

In a small bowl, combine all vinegarette ingredients except the olive oil. Whisk in the olive oil until emulsified.

Pour vinegarette over the salad and toss.
