Salade d'orange

Ingredients

  • 2 oz of watercress
  • 1 lb crisp young carrots, grated
  • 2 oranges peeled and segmented
  • Ginger Dressing
  • 1 inch fresh gingerroot, grated, then mix with 3-1/2 tablespoons white rice vinegar
  • ½ wholegrain mustard
  • 1 t honey
  • 2 T Chamomile Citrus Tea (to lighten the dressing)
  • Grated rind and juice of 1/2 medium orange
  • 3 T olive oil
  • 2 T toasted sesame seeds
  • sea salt and freshly ground black pepper

Instructions

Prepare the dressing, mix all the ingredients until thoroughly combined, then set aside and let rest for 1/2 hour.

Place the watercress in a salad bowl, arrange the grated carrots and orange segments on top, pour over the dressing, and Viola!
