2 oz of watercress
1 lb crisp young carrots, grated
2 oranges peeled and segmented

Ginger Dressing
1 inch fresh gingerroot, grated, then mix with 3-1/2 tablespoons white rice vinegar
1/2 wholegrain mustard
1 t honey
2 T Chamomile Citrus Tea (to lighten the dressing)
Grated rind and juice of 1/2 medium orange
3 T olive oil
2 T toasted sesame seeds
sea salt and freshly ground black pepper

Prepare the dressing, mix all the ingredients until thoroughly combined, then set aside and let rest for 1/2 hour.

Place the watercress in a salad bowl, arrange the grated carrots and orange segments on top, pour over the dressing, and Viola!
