Salade d'orange
Ingredients
- 2 oz of watercress
- 1 lb crisp young carrots, grated
- 2 oranges peeled and segmented
- Ginger Dressing
- 1 inch fresh gingerroot, grated, then mix with 3-1/2 tablespoons white rice vinegar
- ½ wholegrain mustard
- 1 t honey
- 2 T Chamomile Citrus Tea (to lighten the dressing)
- Grated rind and juice of 1/2 medium orange
- 3 T olive oil
- 2 T toasted sesame seeds
- sea salt and freshly ground black pepper
Instructions
Prepare the dressing, mix all the ingredients until thoroughly combined, then set aside and let rest for 1/2 hour.
Place the watercress in a salad bowl, arrange the grated carrots and orange segments on top, pour over the dressing, and Viola!
