Herb Roasted Tomatoes
- 4 ripe tomatoes
- ⅓ c extra virgin olive oil
- 4 cloves garlic, peeled and finely chopped
- 2 T finely chopped basil
- 1 T finely chopped thyme
- ¼ t salt and pepper
- ½ t sugar
Preheat an oven to 350°F.
Core the tomatoes and slice in half horizontally. Place the halves, cut side up, in a baking pan that snuggly holds all the tomatoes.
In a small bowl, combine the oil, garlic, basil and thyme. Drizzle the oil mixture over the cut surface of the tomatoes.
Season the tomatoes with the salt, pepper and sugar. Place in the preheated oven and bake for 1½ to 2 hours or until they begin to collapse and caramelize.
Remove the tomatoes from the oven and serve either hot or at room temperature.
