1 c long grain rice
oil
1/2 c onion, chopped
1/2 c green pepper, chopped
2 garlic cloves, minced
1/2 c pureed tomatoes
2 c chicken broth

Saute the onion, pepper & garlic in some oil. Remove.

Add more oil & brown the rice. It's done when it smells nutty.

Blend 1/2 tomatoes, garlic, and the broth.

Add the blended sauce, balance of tomatoes, & veggies back in and the tomatoes. Bring to a boil. Cover and reduce heat to simmer for 20 minutes or until liquid absorbed.
