Taco Soup

Ingredients

  • olive oil
  • 1 white onion, chopped
  • garlic
  • 1 ½ lbs ground beef
  • 16 oz can corn
  • 16 oz can pinto beans
  • 16 oz can fire roasted diced tomatoes
  • 10 oz can rotel
  • 16 oz tomato sauce
  • 2 qts beef broth
  • 1 T chili powder
  • ¼ t garlic powder
  • ¼ t onion powder
  • ¼ t crushed red pepper flakes
  • ¼ t dried oregano
  • ½ t paprika
  • 1 ½ t ground cumin
  • 1 t black pepper
  • 2 t basil to taste
  • 1 t thyme to taste
  • salt
  • cheese (optional)
  • crushed tortilla chips (optional)

Instructions

Briefly saute the onion and garlic. Add the ground beef and cook until brown. Don't stir too often, so the beef has a chance to brown well in some spots.

Add the canned ingredients and cook a bit to bring out the flavor from the tomatoes.

Add the broth and seasoning. Cook for an hour or so.

Serve with optional cheese and tortilla chips.

Cooking time: 1 hour
