Cocoa Chili Rubbed Steak

Ingredients

  • 1 T cocoa powder
  • 1 T brown sugar
  • 1 t sea salt
  • 1 t chile powder
  • ½ t fresh ground black pepper
  • pinch dried oregano
  • pinch dried thyme
  • pinch garlic powder
  • pinch onion powder
  • pinch coriander powder
  • a good grilling steak

Instructions

Mix all ingredients together with a fork. A quick taste will present a little heat, bitterness, sweetness, and saltiness in fairly even proportions.

Trim any excess fat from around the steaks and pat them dry with a paper towel.

Using about a ½ tsp or so of rub per side, coat the steaks thoroughly, and... well... rub.

You can set these aside for up to an hour, but it's really not necessary, and besides... the salt in the rub will begin to pull juices from the beef that you'd probably rather leave in place.

Preheat the grill on high. Meanwhile, find an old brick you're using as a doorstop and wrap it in a layer of aluminium foil.

Once the grill is good and hot (at least 10 mins.) steaks on one side, brick on top. Close the lid and turn the other side of the grill to med-low.

Cook 6 mins., flip, and repeat on the other side.

Let rest 2 mins. before serving to allow the juices to redistribute throughout the meat.
