Lime and Basil Tilapia
Ingredients
- 4 tilapia fillets
- ¼ c olive oil
- 2 T lime juice
- zest from 2 limes
- 1 T fresh basil, minced
- 2 t bourbon
- 1 t salt
- black pepper
Instructions
Combine everything except the fish in a bowl. Add mixture and fish to a zip top bag. Refrigerate for 30 minutes.
Preheat grill to medium high.
Remove tilapia from marinade. Transfer marinade to pot and heat to boil, then reduce and simmer for 5 minutes.
Grill tilapia for 3-5 minutes per side over high (or medium high) heat. Done when fish reaches 145° internal temperature.
Serve with marinade.
