Bacon BBQ Meatloaf with Mashed Potatoes

Ingredients

  • 10-12 small yukon gold potatoes, unpeeled, washed, quartered
  • bay leaf
  • salt
  • 2 whole garlic cloves
  • 2 c water
  • 1 lb ground beef
  • 1 t garlic powder
  • 1 T worcestershire
  • 1 egg
  • salt & pepper
  • ¼ Italian seasoned breadcrumbs
  • ¼ BBW sauce
  • 6 bacon strips, cooked, crumbled
  • 3 T butter
  • ¼ sour cream
  • ¼ milk

Instructions

Place potatoes in bottom if Instant Pot. Add bay leaf, salt, whole garlic cloves, and water. Add trivet on top.

In bowl, combine ground beef through bacon ingredients. Shape into a loaf form and wrap in foil. Place on top of trivet.

Cook in Instant Pot on high pressure for 20 minutes. When done, quick release the pressure.

Remove meatloaf from Instant Pot and remove foil. Baste with more BBQ sauce. Place in oven on broil for 2 minutes or so.

Remove trivet from Instant Pot and drain water. Add the butter, sour cream, and milk. Mash potatoes. Season as needed.
