Chicken and Rice


  • whole chicken
  • enough water to cover chicken
  • 3 stalks celery, chopped
  • 1 yellow onion, diced
  • ½ t pepper
  • ½ t salt
  • ½ t oregano
  • ½ t celery salt
  • 1 t dried parsley
  • 3 c white rice


In large stock pot, bring all ingredients except rice to a boil. Reduce to simmer for 2-3 hours.

Remove chicken. Continue simmering and reducing broth. Debone chicken.

Remove broth from pot. Put rice and 6 cups of broth in pot. Add chicken and additional seasoning (salt, pepper, parsley). Simmer covered until rice is cooked.

Season to taste.


Cooking time: 3 ½ hours
