Moroccan Chicken Couscous


  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1 knob fresh ginger, chopped
  • butter
  • ½ t ground tumeric
  • 1 t yellow curry powder
  • ¼ t cinnamon
  • 4 chicken breasts
  • 1 carrot, chopped
  • 1 tomato, sliced
  • 1 can chickpeas, drained & rinsed
  • 1 zucchini, chopped
  • 2 c chicken stock
  • 1 box couscous


Fry the first three ingredients in the butter until the onions are softened. Add the tumeric, curry powder and cinnamon until fragrant. Add the chicken breasts and fry until the onions and chick are browned. Add the remaining ingredients. Season with salt, pepper, and cinnamon. Simmer over medium heat, covered for 30 minutes or until chicken is done. In the meantime, cook the couscous according to the package directions. Serve the chicken and veggie mixture over a bed of couscous.
