Meatball Ingredients
1/2 lb ground beef
1/2 lb ground pork
1/4 c bread crumbs
1 egg, slightly beaten
1 T parsley, finely chopped
1/2 t basil
1/2 t onion powder
garlic, minced
1/2 t paprika
salt & pepper
grated parmesan or romano cheese

Soup Ingredients
6 q chicken broth
1 t garlic powder
1/2 t celery salt
1 chicken breast
1 c carrots, chopped
1 c celery, chopped
1 small onion, diced
1 lb curly endive, coarsely chopped
--OR-- 1/2 - 1 head escarole, cleaned & shredded
--OR-- 2 c fresh spinach, chopped
1 c orzo
salt & pepper

Mix meatball ingredients, but don't overwork. Form into small meatballs (medium marble size).

Saute meatballs in olive oil until brown.

Bring chicken stock & garlic powder+celery salt to boil. Add chicken, meatballs & veggies and simmer 1 hour.

Depending on what greens you use, you will need to add them so they become tender, but not so soon that they turn to mush.

Add the pasta so that, according to the directions, it is done when you are done simmering the soup.

Remove chicken and shred. Replace in soup.
