Irish Soda Bread

Ingredients

  • 420 g AP flour
  • 3 g kosher salt
  • ¾ t baking soda
  • 337 g buttermilk

Instructions

Preheat oven to 450° F. Line baking sheet with parchment paper.

Add dry ingredients to large bowl and whisk. Make a well in the center of the flour. Add the buttermilk to the well. Use spoon to gently mix ingredients. Work into shaggy ball.

Lightly flour work surface. Turn dough out and work about 4 times until the dough comes together. Shape into loaf.

Transfer loaf to baking sheet on the parchment paper. Lightly sprinkle top with flour. Slash an "X" into top of loaf.

Place in oven. Bake for 15 minutes. Lower temperature to 400° F. Rotate sheet. Bake for 25-30 or until a deep golden brown.
