Chocolate Cappuccino Cookies
Ingredients
- 1 T instant coffee granules
- 1 T hot water
- 1 egg white
- ¾ + 1 T sugar, divided
- ¼ c canola oil
- 2 T corn syrup
- 2 t vanilla extract
- 1 ¼ all purpose flour
- ½ c baking cocoa
- ¼ t salt
Instructions
Disolve coffee in hot water in a small bowl.
In a large bowl, combine egg white, sugar, canola oil, corn syrup, and vanilla. Beat until well blended. Combine in the flour, cocoa, and salt. Gradually add the coffee.
Roll into 1" balls. Place 2" apart on ungreased cookie sheet. Flatten to ¼" thickness with glass dipped in remaining sugar.
Bake at 350 for 5-7 minutes or until center of cookie is set. Cool on wire rack.
