Grilled Baby Potatoes with Dijon Mustard & Thyme

Ingredients

  • 1 lb baby Yukon Gold potatoes
  • ¼ c mayonnaise
  • ¼ c Dijon mustard
  • 1 T + 1 t salt
  • ¼ t black pepper
  • 3 minced garlic cloves
  • 2 t chopped fresh thyme
  • 1 t fresh chopped Italian parsley (optional)

Instructions

Put potatoes in pot cover by 1" with water and add 1 T of salt. Bring to boil, reduce to simmer until potatoes are tender. Drain and rinse potatoes to cool.

Heat grill to medium.

Wisk together all other ingredients except for parsley.

Slice potatoes in half. Add to sauce and toss to coat.

Grill for about 3 minutes or until grill marks are present. Flip and grill another 3 minutes.

Plate and (optionally) top with parsley.
