Beef Stew

Ingredients

  • 2 lbs chuck roast, cut into 1 ½ inch cubes
  • salt
  • pepper
  • 2 T butter
  • 2 c pearl onions
  • 3 stalks celery, cut into 1 inch pieces
  • 4 carrots, cut into 1 inch pieces
  • ½ c pepperoncini, thinly sliced
  • 1 T tomato paste
  • 1 T sugar
  • 1 oz packet ranch seasoning mix
  • 2 T worchestershire sauce
  • 2 T arrowroot
  • 1 ½ c beef broth
  • 3 cloves garlic, minced

Instructions

Season beef with salt. Sauté in butter. Do in batches, if necessary. Remove.

Mix beef broth with arrow root. Place all ingredients into instant pot, including the browned beef.

Cook on high pressure for 35 minutes. Allow pressure to release naturally.

If necessary, add additional arrowroot mixed with water to thicken sauce.
