Cajun Chicken Bog
Ingredients
- 1 T canola oil
- 8 oz andouille sausage, sliced into half moons
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 5 c chicken broth, divided
- 2 c rice
- salt
- pepper
- 1 rotisserie chicken, remove and shred meat
- green onions, sliced
- hot sauce
Instructions
Sauté sausage in oil in instant pot until browned. Add onion and cook until brown. Add garlic and cook briefly.
Stir in 4 cups broth, rice, salt, and pepper. Put on lid and pressure cook on low for 3 minutes, no "keep warm". After done cooking let cool 10 minutes, then release pressure. Check that rice is tender.
Sauté and add remaining broth and chicken. Cook until chicken is heated. Add green onions and hot sauce.
