Chicken Barley Soup

Ingredients

  • olive oil
  • yellow onion, diced
  • 1 garlic clove, minced
  • 3 ½ c chicken broth
  • 1 carrot, diced
  • 3 rib celery, diced
  • 1 T tomato paste
  • 1 t basil
  • ½ c pearl barley
  • 1.5 lbs chicken breast
  • 1 14 oz can diced tomatoes
  • salt & pepper
  • bay leaf
  • parmesan cheese

Instructions

Sauté onion in oil in Instant Pot. Add garlic and briefly cook. Deglaze with chicken broth.

Add all other ingredients except cheese. Pressure cook on high for 18 minutes. Let rest 10 minutes, then release pressure.

Remove bay leaf. Remove, shred, and re-add chicken. Add parmesan cheese, if desired.
