Vegetable Soup
Ingredients
- 1 T extra virgin olive oil
- 1 white onion, chopped
- 4 garlic cloves, minced
- salt
- pepper
- 1 T tomato paste
- 2 c chopped cabbage
- 2 c cauliflower florets
- 2 carrots, peeled and thinly sliced
- 2 celery stalks, thinly sliced
- 1 red bell pepper, chopped
- 1 medium zuchinni, chopped
- 15 oz can kidney beans, rinsed and drained
- 15 oz can diced tomatoes
- 4 c vegetable broth
- 2 t Italian seasoning
- ¾ t paprika
- fresh chopped parsley
Instructions
Sauté the onion in oil. Season with salt. Add garlic when onion close to being done. Add tomato paste and stir for 1 minute.
Add all remaining ingredients except parsley and salt.
Cook on high pressure for 12 minutes. Immediately release pressure.
Stir soup and season with salt. Add parsley.
