Orzo with Bacon and Summer Vegetables

Ingredients

  • 4 bacon strips, cut into small pieces
  • ½ red onion, finely diced
  • ½ white onion, finely diced
  • 3 cloves garlic, minced
  • 2 scallions, finely diced
  • 1 T lemon zest
  • 3 sprigs fresh thyme
  • 1 t fresh sage, finely chopped
  • crushed red pepper flakes
  • 1 c peas
  • 4 roma tomatoes, chopped
  • 1 c broccoli, small pieces
  • 1 ½ c orzo
  • salt & pepper, to taste
  • optional fresh basil and parmesan

Instructions

Cook bacon in dutch oven or pot until crisp. Remove, leaving at most 2 T bacon grease.

Sauté onions until slightly soft. Add garlic, scallions, lemon zest, thyme, and sage. Season with salt and crushed red pepper.

Add tomatoes, broccoli, and peas. Simmer until veggies soften. You may need to add some additional water.

While veggies are cooking, boil orzo.

Add orzo and bacon into pot and stir. Add some pasta water if too dry.

Season to taste. Add optional basil and parmesan.
