Roasted Broccoli Salad

Ingredients

  • 5 c broccoli florets
  • 2 T olive oil
  • ½ t salt
  • ¼ t black pepper
  • 3 t balsamic vinegar
  • 1 garlic clove, pressed

Instructions

Preheat oven to 450 degrees Fahrenheit. In large bowl, toss broccoli with 1 tablespoon of the olive oil and the salt and pepper. Spread on baking sheet and roast 10 minutes or until broccoli is tender and lightly browned.

Meanwhile, in jar with tightly fitting lid, combine remaining olive oil, balsamic vinegar, and garlic. Shake until well combined. Place broccoli in serving bowl and let cool slightly. Pour dressing over and toss just before serving.
