Cuban Black Beans

Ingredients

  • oil
  • red onion, small dice
  • 2 jalapeño, seeded, small dice
  • 5 cloves garlic, minced
  • 2 15oz cans black beans, rinsed
  • 1 c warm water
  • 1 t salt
  • 1 t cumin
  • 1 t chipotle chili powder, optional
  • 3 T fresh cilantro, chopped finely
  • juice from 1 lime
  • Instructions

    In dutch oven heat oil. Sauté onion and jalapeño until onion translucent. Add garlic and briefly sauté.

    Add beans, water, salt, cumin, and chili powder. Bring to boil then reduce to simmer. Simmer for 10-15 minutes until water reduced to thick broth.

    Remove 1 c beans and mash. Return to dutch oven and stir.

    Add cilantro and lime. Stir.
