Garlic Roasted Potatoes

Ingredients

  • 1 lb baby potatoes
  • 2 T salted butter, melted
  • T T olive oil
  • 4 cloves garlic, minced
  • salt
  • pepper
  • cayenne pepper
  • fresh parsley, chopped
  • Instructions

    Preheat oven to 425°.

    Cut each potato into small slices leaving attached. Consider using a wooden spoon or chop sticks to limit knife travel.

    Mix butter, oil, and seasonings together in a bowl. Toss potatoes in mixture, ensuring they are well coated down in the cuts.

    Place potatoes in roasting pan and roast for 15 minutes. Remove pan, rotate the potatoes and baste with oil. Roast another 15+ minutes, until done.

    Garnish with parsley.
