• 2 turbinado sugar, packed
• 2 chili powder
• 2 paprika
• 1 ground cumin
• ⅙ cayenne
• 1 garlic powder
• 1 mustard powder
• ⅔ pepper
• ⅔ salt, but see note below

Ingredients are by proportion of volume. Use teaspoons or cups or any other measure.

For use on brined poultry, omit the salt from the rub.

Mix well.
