Black Eyed Pea Soup
This makes a lot of soup. If making the full recipe, use a large dutch oven. Otherwise, cut the recipe in half.
Ingredients
- 2 lbs dried black eyed peas
- 6 c beef broth
- 2 4 oz cans diced green chilies
- 1 yellow onion, diced
- 1 T ancho chili powder
- 1 T worcestershire sauce
- 1 t liquid smoke
- 1 T light brown sugar
- 1 T garlic powder
- 1 T cumin
- ½ T oregano
- ½ T ground black pepper
- 1 lb ground pork sausage
- 1 lb ground beef
- 1 T adobo seasoning
- 2 T all purpose flour
- 1 T butter
- 4 roma tomatoes, finely chopped
Instructions
In large bowl, soak beans covered by water for 1 hour.
Strain peas and add to dutch oven with broth, chilies, onion, chili powder, worcestershire, liquid smoke, brown sugar, garlic powder, cumin, oregano, and pepper.
Meanwhile, in skillet, brown sausage and remove. Brown ground beef and remove. Add adobo, flour, butter, and tomatoes to skillet. Cook for a couple of minutes.
Add meat and tomato mixture to the soup.
Cook until peas are tender. Add water or broth if necessary.

Preparation time: 1 hour
Cooking time: 1 ½+ hours
