Cabbage Soup with Beef
Ingredients
- olive oil
- white onion, chopped
- 1+ lbs beef suitable for a soup
- 1 celery stalk, chopped
- 2 carrots, peeled and diced
- 1 small green cabbage, chopped in bite sized pieces
- 4 garlic cloves, minced
- 6 c beef broth
- 3 T fresh parsley, chopped
- 2 t dried thyme
- 2 t dried rosemary
- 2 t garlic powder
- salt & pepper
Instructions
Heat oil in soup pot and brown beef. Add onions can sauté until translucent. Add carrots and celery and sauté some more.
Add cabbage and cook until beginning to soften, about 5 minutes. Add garlic and cook a bit.
Add all other ingredients and cook until beef is tender and cabbage is done.
