Oktoberfest Stew with Lager and Smoked Sausage

Ingredients

  • 1 T olive oil
  • 14 oz smoked sausage, cut into bite-sized pieces
  • 1 ½ white onion, cut into thin semi-circles
  • ½ head small cabbage, cored and thinly sliced
  • salt & pepper
  • ¼ ground caraway seeds
  • 2 cloves garlic, minced
  • 1 c lager beer
  • 2 russet potatoes, peeled and cubed
  • 2 ½ c chicken stock
  • 1 ½ T apple cider vinegar
  • 1 T flat leaf parsley, chopped

Instructions

In dutch oven, heat the oil. Add the sausage and brown.

Add onions and brown them.

Add cabbage and stir. Cook until cabbage softens.

Add seasoning. Stir in garlic.

Add beer and stir. Allow to slightly thicken.

Add the potatoes and chicken stock. Bring to boil, reduce to simmer. Cover and stew for 40 minutes.

Remove from heat. Stir in vinegar and parsley. Season to taste.
